Khao Soi Nam Ngiao

The original name of "Khao Soi"

It is " Khao Soi Nam Ngiao " or in some areas it may be called " Kuay Tiew Ho " which reflects the cultural roots that are influenced by the Chinese Ho (Chinese Muslims) and Muslims in Southeast Asia.

Khao Soi is a dish that originated along trade routes, particularly among Muslims traveling along the former Silk Road. It combines Chinese food (e.g. noodles) with Arabian or Indian spices, and has become a local dish in northern Thailand.

How to make Chicken Khao Soi 🥣🐔

For Khao Soi soup

  • 4-5 chicken legs or thighs
  • Coconut milk 500 ml.
  • Plain water 500 ml.
  • 2 tablespoons vegetable oil
  • 3 tablespoons of Khao Soi curry paste (or use 1 tablespoon of red curry paste + curry powder)
  • 2 tablespoons fish sauce
  • 1 tablespoon palm sugar
  • 1 teaspoon dark soy sauce
  • 1 teaspoon curry powder


For Khao Soi noodles

  • Egg noodles 200 grams
  • Vegetable oil for frying


Side dishes

  • Sliced shallots
  • Chopped pickled cabbage
  • Lemon wedges
  • Stir-fried chili powder in oil

method

1️⃣ Prepare the Khao Soi soup.

  • Heat a pan, add vegetable oil, and fry the Khao Soi curry paste until fragrant.
  • Add chicken and stir-fry until yellow. Add coconut milk and water.
  • Season with fish sauce, palm sugar, dark soy sauce and curry powder.
  • Simmer over low heat for 30-40 minutes until the chicken is tender.

2️⃣ Prepare the Khao Soi noodles.

  • Divide the egg noodles into two parts.
  • One part is boiled in boiling water and then set aside.
  • Some are fried in oil until golden brown.

3️⃣ Serve

  • Put the boiled noodles into a bowl.
  • Ladle the soup and chicken over it.
  • Place the crispy noodles on top.
  • Served with pickled cabbage, sliced shallots, lime and fried chili powder in oil.
